In seizing on the difference between a hyphen and an em-dash, the reviewer of this book is being extrememly petty and nitpicky. If that's all she can find wrong with the book, she either has not read in depth, or else it's a damned good book. Besides, the typograhical problem she brings up is not the authors' fault, but that of whoever laid out the text.
